Pasta Salad in Minutes

I really hate “fast food.” It hits my system as all kinds of wrong.

But I love real food that I can make very quickly. This pasta salad is one of my favorite tricks for having a real meal on the table in just a few minutes, without needing to fire up the stove or grill.

The trick is to fill up a ½ gallon thermos with piping hot water at a gas station. My favorite gluten-free pasta, Tinkyada, will cook in this water in about 12 minutes. I always add a healthy pinch of sea salt to the hot water for flavor.

 

While that is cooking, I chop:

1 yellow pepper

1 orange pepper

3 Roma tomatoes

1 cucumber

½ block of cheddar, feta, or gouda cheese

 

When the pasta is cooked, I drain it and add the veggies. Then I squeeze the juice of one lemon over the top, drizzle some extra virgin olive oil on top, and then salt to taste.

It’s pasta salad in minutes. Real food, really fast.
